Seared Yellowfin with Citrus Soy: A Recipe for the First Tuna of Summer
The first yellowfin of summer comes off the dock with the deck still warm — bright red flesh, the smell of salt and outrigger grease still on the cooler lid. There are a hundred ways to cook this fish. The best one is the shortest. A citrus-soy marinade, a screaming hot pan, a rare center finished with sea salt and lime — and you've taught yellowfin to taste like itself.
The Fish
Atlantic yellowfin (Thunnus albacares) start showing in U.S. waters from Massachusetts down to Texas as the Gulf Stream warms through June. A 60-pound fish on the boat at sunrise gives you loins the color of garnet — bright red, firm, large-flaked, mild and meaty, per NOAA Fisheries' own seafood profile. Leaner than bluefin, more flavor than albacore. That is the sweet spot for searing: enough fat to forgive a hot pan, lean enough that you do not need to mask it with butter or cream.
The rule for a recipe like this one is single-purpose: buy sushi-grade, or do not buy. A tuna steak that has gone gray-tan in the case is destined for the can, not the skillet. Ask the counter when it came off the boat. If the answer is more than a day or two, walk.
Ingredients
Serves 2. Scale linearly.
- 2 × 6–8 oz yellowfin tuna steaks, 1 to 1¼ inches thick, sushi-grade
- 3 Tbsp soy sauce (low-sodium preferred)
- 2 Tbsp fresh orange juice
- 1 Tbsp fresh lime juice, plus extra wedges for the plate
- 1 Tbsp fresh lemon juice
- 1 Tbsp toasted sesame oil
- 1 tsp finely grated fresh ginger
- 1 garlic clove, microplaned
- 1 tsp honey
- 1 Tbsp neutral oil (grapeseed or avocado) for the pan
- Flaky sea salt and freshly cracked black pepper, to finish
- Optional: 1 tsp toasted sesame seeds; thinly sliced scallion green
The Method
The whole thing takes longer to plate than to cook. Move with intent.
- Marinate, briefly. Whisk soy, orange juice, lime juice, lemon juice, sesame oil, ginger, garlic, and honey in a shallow dish. Lay the steaks in, turn once, and let them sit 15 minutes — no more. Citrus acid will start to "cook" the surface if you walk away.
- Pat dry. Lift the steaks out and blot every face hard with paper towel. Reserve the marinade. A wet steak steams; a dry steak sears.
- Get the pan ripping hot. Cast iron or carbon steel over your highest burner setting for 3–4 minutes. Add the neutral oil. You want it shimmering and just beginning to wisp smoke.
- Sear 60–75 seconds per side. Lay the steaks down away from you. Do not move them. Flip once. For a 1¼-inch steak, target an internal of 110°F at the core — a rare, ruby band running through the middle.
- Reduce the marinade. While the steaks rest, pour the reserved marinade into a small saucepan and bring it to a hard boil for two minutes. This is the drizzle, and the boil is non-negotiable for food safety.
- Rest, then slice. Two minutes on a cutting board. Slice across the grain into ½-inch planks with a long, sharp knife — a single drawing motion per slice, never a sawing one.
- Finish. Fan the slices on the plate. Drizzle the reduced marinade lightly across the seared band. Crack pepper, flake sea salt, squeeze lime, optional sesame and scallion. Eat immediately.
Serving + Sides
This dish wants contrast — something cool, something starchy, something sharp. Short-grain rice with a splash of rice vinegar is the default. A quick slaw of red cabbage, carrot, jalapeño, and lime cuts the soy. Sliced avocado smooths the heat. If the rest of the cooler came back full, stretch the same marinade and method into a poke bowl the next night — cube the rare center, dress it with the leftover citrus-soy, build it on rice and avocado.
Wine: a chilled dry rosé or an off-dry Riesling. Beer: a Japanese lager. Anything heavier than that fights the fish.
A Note on Quality
Fresh yellowfin off the dock is the gold standard, but a reputable monger's flash-frozen, sushi-grade loin will out-perform a "fresh" steak that has sat on ice three days. Look at color first: a clean ruby red, no brown or gray edges, no rainbow sheen, no sour smell. If the steak is vacuum-packed and frozen, thaw it overnight in the refrigerator inside the bag — never under running water.
On food safety: tuna is one of the few wild fish the FDA permits to be served raw without prior freezing, because the parasites that affect other pelagics are rare in this species. That said, if you intend to serve it rare to anyone immunocompromised or pregnant, freeze it solid at −4°F for seven days first. A cooked-through center will go to the gray side of tan — still edible, never the goal.
